Thai-inspired Chile Meatloaf
✨This is the MOST-requested MEAL at our house these days: Thai-inspired Chile MEATLOAF! ✨
As you can see in the intro sentence, all of the “M” words are capitalized — because this MEAL is part of my #NourishABC series!

Thai Chile MEATLOAF and MASHED potatoes, MUSHY carrots (aka… soft), MANDARIN orange slices, and peanut M&Ms. 🍊

For the meatloaf:
- 12 ounces Impossible ground plant-based meat or sub regular ground beef
- 1/2 cup panko bread crumbs
- 1/2 Tbsp Kinders BBQ dry rub
- 1/2 Tbsp Montreal Steak seasoning
- 1 tsp minced garlic
- 1 tsp Worchestershire sauce
- 1/4 cup oat milk or sub milk of choice
For assembly:
- 4 carrots, quartered and cut into sticks the width of loaf pan
- 1/2 cup Sweet Thai Chile sauce for topping partway through baking
Preheat oven to 375 degrees.
Line the bottom of a loaf pan with a single layer of quartered carrots.
Combine all the meatloaf ingredients into a medium mixing bowl. Combine with hands until thoroughly mixed. Form into a loaf shape and press it on top of the layer of carrots in the loaf pan, pressing down the sides to cover completely.
Bake for 30 minutes. Then, top with the sweet chile sauce and bake for an additional 10 minutes.
Serve with mashed potatoes (optional, but delish!)
